When I’m not party planning, there’s always something I’m up to on the side…cooking! Here’s a fun side dish for your next dinner party!
I just have to share with you one of my favorite side dishes that I’ve concocted. I’ll be honest, the cupboard was slightly bare one night & I had to get a little creative or order pizza…again. I saw a box of Israeli Couscous & thought, “well, some brave soul dared to eat an oyster for the first time, so why not?!”. Over time, I added & experimented with new ingredients. This pretty little side dish has a burst of color to liven up your dinner! It’s lighter than pasta, but just as warm & comforting. Perfect for entertaining two people or try doubling the recipe to serve an entire cocktail party. These itty bitty pearls of deliciousness can be found at your local specialty store. The best part is that the combinations are endless! Add meat, steamed veggies, Greek cheeses, pine nuts or just about anything! Here is what I’ve been mixing in:
Step 1
1 c. Israeli Couscous
1 1/4 c. Chicken or Vegetable Stock (or Water if you prefer)
1 Tbs Butter
In a pot, bring stock (or water) to a boil & add the Tablespoon of butter. Stir in the cup of couscous, cover with a lid & bring down to a simmer. Let simmer for 10-12 minutes. While that is simmering, start chopping up your veggies.
Step 2
1/2 c. White Onion
In a pan lightly coated with olive oil, saute 1/2 cup of chopped white onion. Let onions sweat until almost clear, then take off heat & set aside.
Step 3
1/2 c. sauteed White Onion
10 Cherry tomatoes, sliced in half
1 Tbs Parsley, chopped
1/4 c. Peas, if frozen microwave for 1 minute
Handful of grated Parmesan Cheese
3 Tbs Champagne Vinaigrette
Salt & Pepper, to taste
Toss in these delicious ingredients when the couscous is done & transfer into a bowl.
